Beyond just the scope of being a large-scale production aquaculture facility using “cutting edge” technology, this project has some valuable environmental benefits. Sturgeon around the world are sought after for their prized caviar. Unfortunately, collecting caviar targets the breeding females which severely impacts the population . As a result, most of the sturgeon fisheries have collapsed and all sturgeon species are now either endangered or threatened. In addition to being a viable business, the Rokaviar facility now functions as a genetic reserve for dwindling species as well as reduces the fishing pressures on wild stocks by satisfying consumer demand.

Rokaviar is a 17-acre recirculating sturgeon farm. the facility accommodates the various aspects of spawning, grow-out, and processing of sturgeon for meat and caviar. The first building has the capacity to hold over 1,200,000 gallons of water with fish stocking densities over one pound per gallon of system water.

Rokaviar enlisted many of the various services offered by Biscayne Aquaculture. Before construction started, Biscayne Aquaculture aided in the rigorous permitting process to culture non-native fish species in the state of Florida. Later, when it was time to import the various CITES-listed species of sturgeon, Biscayne Aquaculture again assisted its client in a process that was foreign to them. After building the first fish-holding facility, we educated the staff on the proper management of a high-production aquaculture facility.
